Coffee Cake

If you’d like to show someone your softer side, surprise them with this cake. Just be sure to remember the coffee!

On the morning of Rory’s sixteenth birthday, Luke shows us for the first time a glimpse of his softer side. When she and Lane arrive at the diner before school, Luke has a table set up with balloons and this cake—waiting for the birthday girl to arrive, so she could start her day off in a special way. Thanks Luke.

2 c Flour
¾ c Sugar
1 T Baking powder
½ t Salt
1 Egg
¾ c Sour cream
½ c Half-and-half
1½ t Vanilla
½ c Butter, cold
Streusel Topping:
½ c Flour
½ c Sugar
¾ c Brown sugar
1 T Cinnamon
¼ c Butter
Prep oven and pan: Place oven rack in center position.
Preheat oven to 350°F. Grease and flour an 8×8-inch baking
pan. Set aside.
Combine dry ingredients: In a medium bowl, combine
flour, sugar, baking powder, and salt. Set aside.
Combine wet ingredients: In a large mixing bowl, beat
egg until yolk and whites are fully combined. Stir in sour cream, half-and-half, and vanilla.
Make batter: Using a large fork, mix dry ingredients into wet ingredients. Stir to combine, but no more than that. Cut in butter. Pour batter into prepared pan. Set aside.
Make Streusel Topping: In a medium bowl, mix flour, sugar, brown sugar, and cinnamon. Cut in butter until little brown balls start to form. Spread streusel evenly across the top of the batter.
Bake Coffee Cake: Place pan in oven. Bake for 25–30 minutes. Insert a toothpick to test doneness. When it comes out clean, cake is done. Remove from oven. Cool for 10 minutes. Cut and serve.
